Vinifikation

Sparkling wine is the supreme discipline for us. First and foremost, it is about pressing a high-quality base wine. Whole grapes of the Chardonnay variety are pressed extremely gently and fermented in used wooden barrels. Further, aging takes place on full lees in steel tanks without sulfur. In April, the second fermentation is initiated after the addition of residual sweet wine and yeast, which is then completed in the bottle. The bottles are aged on the lees for at least 30 months and are gradually disgorged. During disgorgement, only the yeast is removed and lightly sulfured – without dosage.
